Sweet Potato Souffle
Ingredients
- 4 medium sweet potatoes
- 1 T. ground coriander
- 2 t. vanilla
- ¼ c. soy or nut milk
- 2 T. honey
- 1 T. light molasses
- ½ c. chopped walnuts
Ingredients
- Bake, cool, peel and mash sweet potatoes. A food processor works well.
- Add remaining ingredients except walnuts and mix well.
- Spoon into casserole dish and top with chopped walnuts.
- Bake at 350 degrees for 30 minutes.
