Pumpkin Pie

Pumpkin PieBlend in blender:
½ c. raw cashews with ¾ c. water

¾ c. hot water
1 t. vanilla
½ c. packed dates or date pieces
1 t. coriander
1½ c. pumpkin puree, cooked carrot or sweet potato
¼ c. cornstarch
¼ c. honey
1 t. salt (scant)
½ t. cardamom
1 T. molasses

  1. Let dates stand in hot water while blending cashews and assembling remaining ingredients.
  2. Thoroughly liquefy dates and water with cashew mixture, then add pumpkin and remaining ingredients.
  3. Pour into an unbaked whole grain pie crust.
  4. Bake at 300 degrees for 1 hour or until the pie has set in the center.
