Blend in blender:½ c. raw cashews with ¾ c. water
Add:¾ c. hot water
1 t. vanilla
½ c. packed dates or date pieces
1 t. coriander
1½ c. pumpkin puree, cooked carrot or sweet potato
¼ c. cornstarch
¼ c. honey
1 t. salt (scant)
½ t. cardamom
1 T. molasses
Instructions- Let dates stand in hot water while blending cashews and assembling remaining ingredients.
- Thoroughly liquefy dates and water with cashew mixture, then add pumpkin and remaining ingredients.
- Pour into an unbaked whole grain pie crust.
- Bake at 300 degrees for 1 hour or until the pie has set in the center.
