Ingredients
- 1 lb. firm tofu, cut into 3/4 inch chunks
- 2 T. chicken-style seasoning
- 2 c. water
Boil tofu in seasoned water for 20 minutes. Drain and combine with remaining ingredients:
- 2 1/2 c. diced tomatoes
- 4 c. cucumbers
- 1/2 c. chopped red onion
- 1 c. pitted whole black olives
- 1/4 c. lemon juice
- 1 t. salt
- 1 t. basil
- 1/2 t. oregano
- 1/2 t. garlic powder or 1 clove, pressed
Allow to chill and marinate at least 30 minutes. It's also good without the tofu!
