Ingredients
- 2/3 c. whole wheat pastry flour
- ½ c. carob powder
- 1/3 c. Sucanat or date sugar
- ¾ c. non-dairy milk
- 1 T. Ener-G baking powder 1 t. vanilla
- 1/3 c. honey
- 1 c. chopped nuts
- 1 T. powdered coffee subst.(Postum)
- ½ t. salt
Instructions
- Preheat oven to 400o.
- Measure dry ingredients in one bowl and wet in another.
- Prepare 8 x 8” pan with nonstick spray.
- When oven is hot, mix together dry and wet ingredients.
- Stir quickly and place in oven immediately. Speed is important since baking powder is moisture activated.
- Bake at 400 degrees for 5 minutes, then reduce heat to 350o and continue baking for 25 minutes. Cool and top with Carob Fudge Sauce or Frosting.
