Broccoli Soup
Ingredients- 5 ½ c. nut milk*
- 1/3 c. cornstarch
- 3 c. chopped, steamed broccoli
- 2 T. nutritional yeast flakes
- ½ t. garlic powder or 1 clove pressed
- ½ c. chopped, steamed onions or 2 T. dry onion flakes
- 1 t. salt
- 1 T. tahini
Instructions- Heat 4 cups nut milk, nutritional yeast flakes, garlic powder, tahini and salt.
- Mix corn starch with remaining 1½ c. milk. Add to heated milk and cook on low heat, stirring constantly until thickened.
- Add steamed broccoli and onions. Serve hot.
*To make nut milk, blend 1 cup raw cashews or almonds and 4½ cups water.
