Greek Salad

Greek SaladSoon, the garden will furnish the ingredients for this favorite!

Ingredients

  • 1 lb. firm tofu, cut into 3/4 inch chunks
  • 2 T. chicken-style seasoning
  • 2 c. water


    Boil tofu in seasoned water for 20 minutes. Drain and combine with remaining ingredients:


  • 2 1/2 c. diced tomatoes
  • 4 c. cucumbers
  • 1/2 c. chopped red onion
  • 1 c. pitted whole black olives
  • 1/4 c. lemon juice
  • 1 t. salt
  • 1 t. basil
  • 1/2 t. oregano
  • 1/2 t. garlic powder or 1 clove, pressed


Allow to chill and marinate at least 30 minutes. It's also good without the tofu!
