Tofu Mayonnaise

Tofu Mayonnaise

  • 1/3 c. raw sunflower seeds or cashews or light olive oil
  • 1/3 c. water
  • 12.3 oz silken tofu, extra firm
  • 2½ T. lemon juice
  • ¾ t. salt
  • ½ t. garlic powder
  • 1 t. onion powder


  1. Combine all ingredients in blender and blend until smooth. Use spatula to stir during blending process.
  2. Chill. Keeps for 7-10 days in refrigerator.
  3. For Sour Cream, add one additional tablespoon lemon juice.

Nutritional analysis per 2 T: 35 calories, 2.5 g fat, 1.3g carbohydrate, 2.5 g protein, 0 mg cholesterol, .5 g fiber, 27 mg calcium, 1.4 mg iron, 113 mg sodium.
