Broccoli Soup

Broccoli SoupIngredients
  • 5 ½ c. nut milk*
  • 1/3 c. cornstarch
  • 3 c. chopped, steamed broccoli
  • 2 T. nutritional yeast flakes
  • ½ t. garlic powder or 1 clove pressed
  • ½ c. chopped, steamed onions or 2 T. dry onion flakes
  • 1 t. salt
  • 1 T. tahini

Instructions
  1. Heat 4 cups nut milk, nutritional yeast flakes, garlic powder, tahini and salt.
  2. Mix corn starch with remaining 1½ c. milk. Add to heated milk and cook on low heat, stirring constantly until thickened.
  3. Add steamed broccoli and onions. Serve hot.

*To make nut milk, blend 1 cup raw cashews or almonds and 4½ cups water.
