Sweet Potato Souffle

Ingredients

  • 4 medium sweet potatoes
  • 1 T. ground coriander
  • 2 t. vanilla
  • ¼ c. soy or nut milk
  • 2 T. honey
  • 1 T. light molasses
  • ½ c. chopped walnuts

Ingredients

  1. Bake, cool, peel and mash sweet potatoes. A food processor works well.
  2. Add remaining ingredients except walnuts and mix well.
  3. Spoon into casserole dish and top with chopped walnuts.
  4. Bake at 350 degrees for 30 minutes.
