PUMPKIN
PIE
Blend in blender:
½ c. raw cashews with ¾ c. water
Add:
| ¾ c. hot water |
1 t. vanilla |

c. packed dates or date pieces |

t. coriander |

c. pumpkin puree, cooked carrot or sweet potato |
¼
c. cornstarch
1 t. salt (scant) |
| ¼
c. honey |

T. molasses |
| ½
t. cardamom |
|
- Let dates
stand in hot water while blending cashews and
assembling remaining ingredients.
- Thoroughly
liquefy dates and water with cashew mixture, then
add pumpkin and remaining ingredients.
- Pour into an
unbaked whole grain pie crust.
- Bake at 300
degrees for 1 hour or until the pie has set in
the center.
