Dairy-free and Delicious

QUICK & EASY "CHEESE"

Tofu is made from soy milk. A coagulating agent is used to make soybean curd, much like cottage cheese. It is packaged in one-pound blocks of fresh, refrigerated tofu, or 12.3 oz. blocks of silken tofu in an aseptic box, which stays fresh on the shelf.

12.3 oz.silken tofu, extra firm
2½ T. tahini or sesame seeds
½ c. pimentos
½ c. water
2 T. nutritional yeast flakes

2 T. lemon juice
¾ t. salt
1¼ t. onion powder
¼ t. garlic powder
  1. Combine all ingredients in blender.
  2. Blend until smooth.
  3. May substitute 1¼ cup cooked millet or cornmeal mush for tofu.

Serve with baked corn chips, over baked potatoes or pasta, or on pizza. Makes 15 servings.
Nutritional analysis per 2 T. serving: 41 calories, 5.2 g fat, 2.4 g carbohydrate, 3.5 g protein, 0 mg cholesterol, 1 g fiber, 37 mg calcium, 1.63 mg iron, 127 mg sodium.
