Dairy-free and Delicious

BROCCOLI SOUP

5 ½ c. nut milk*
1/3 c. cornstarch
3 c. chopped, steamed broccoli
2 T. nutritional yeast flakes
½ t. garlic powder or 1 clove pressed
½ c. chopped, steamed onions or 2 T. dry onion flakes
1 t. salt
1 T. tahini

  1. Heat 4 cups nut milk, nutritional yeast flakes, garlic powder, tahini and salt.
  2. Mix corn starch with remaining 1½ c. milk. Add to heated milk and cook on low heat, stirring constantly until thickened.
  3. Add steamed broccoli and onions. Serve hot.

*To make nut milk, blend 1 cup raw cashews or almonds and 4½ cups water.
